Personally I would say to start with big band music like count basie. It's dance music, so it's pretty palatable for fresh ears. Then once you are familiar with the main tunes try to find recordings of different people doing the songs. Since jazz is so based off improvisation, it's good to know what the main melody is so you you understand what is going on. Then you have Art Blakey, Miles Davis. It also depends on what time period and sub genre of jazz you want to listen to. Bebop is generally fast paced, cool jazz is nice to listen to while relaxing. Dixieland is some of the oldest jazz, but is fun too.
