How do you write out a song that uses a mode instead of a usual

You know the major and minor scale are two of the modes, right? You would right with them the same way you write with the major and minor scale

I know that, but what if I am playing in G Mixolydian? Would I just write the key signature with no sharps or flats like a C major/A minor?

I was writing something in G Mixolydian out in Finale and I was just confused as to why there wasn't any option for that key signature, I shouldve just put in the key signature or C major. I understand it now, sorry for the confusion.

This. Modes are a completely different beast from major/minor. The idea, very short, is that major/minor/modes is so much more than just an (ordered) set of notes. If you play, for example, the collection of notes corresponding to a C major scale, your ear will naturally gravitate towards the 'home note' being C or A. If you want to play in a mode, you have to 'force' the ear to hear one of the other notes as being the 'home note'. The problem is that this is not natural/easy to do, and usually takes the form of the bass part playing a drone note.

The dichotomy between tonal vs modal seems like a giant misnomer because it implies that modal music can't have a strong tonal center which is completely untrue. All of these pieces are modal and have a strong gravitation towards the home note.
