I've only ever messed with effects if they're built-in to my shitty amp or with VSTs. I want to start building a collection of pedals and other effects though. What are good pedals for the essentials, like reverb, delay, etc?

Depends on how much you have to spend and what tones you're going for.
Digital shit like the TC electronics delay will model analog, tape, digital with different qualities; dark and lofi, bright and short delay, oscillation, long clear repeats, etc. Fuzz is something you need to ask yourself, "how fucked up do I want to mangle my guitar tone?", Big Muff with tone wicker will give you fuzz with midrange and volume other boutique will be noisier. All other modulation depends on what you want. There are more than enough units that mimic vintage and new shit on the market. It all really comes down on how much you have to spend.

once you get everything set up it can be really fun and make you more interested. i've spent more detail on pedals with 2 or 3 knobs than i have with huge detailed VST effects. for example, the boss ds-1 is analog, so if you turn the knob 1mm you will be able to hear a difference, you won't get that with digital unless it's done really well (tc electronics). they're more limited usually too but that's a good thing at times, it makes you get more creative. but remember it's not really about the gear, using pedals wont make you a better guitar player or music and using vsts won't make you a better guitar player or musician. but hardware might draw you in more than sitting at a computer like an office worker.
