Monochrome waterfall plots are perpetually from the future.
its hard for me to understand the fact that music is just oscillators creating wave forms that travel to your ear. I pull up some synths in Ableton or whatever, and i can make different sounds with different oscillators and i'll apply LFO's as well. But I cannot make "listenable" music like i can if i am actually playing a guitar. Tips?

Do you enjoy what you're doing? If you are, then stick with it. You want something more listenable, learning synthesis and music theory. But I, personally, enjoy that idea of music as enjoying sounds rather than just as 'music'. If you're happy with what you're doing already, go with it, it sounds interesting to me at least
