Same source of music - youtube, same headphones, only difference was the computers. The workstation sounded noticeably better. I thought by now, computer hardware would be so good across the board that it wouldn't matter, is this not the case? Or is it an OS issue, the laptop is a macbook, the workstation is Windows 10.
Could be many things. But one common problem is that the components of a laptop are more cramped together, often aren't well shielded to reduce weight and will cause interference.

Evidently the implementation of your desktop motherboard's onboard audio is better than your macbook motherboard's onboard audio. That's the only reason it should sound different.
If you want to equal the audio playing field between your computers then get an external DAC Amp of some kind.
