Can someone explain why the fuck is there even a "post" prefix? I mean, if it's in that genre wouldn't be just "rock" "hip-hop"? It's not like all the genres are dead and that music is coming 'after' something. It just makes it sound pompous and pretentious.

post- means the genre has significantly gone beyond its starting point, taking some of the original ideas but has become something different. Post-rock doesn't mean rock has been superseded just that it is a genre based off rock but different enough to be called something else.
It is usually meant to mean 'I have no idea what it is but it isn't <genre> any more'. Post genres are often in opposition: post-punk was a deliberate attempt to get away from the simplicity of punk but was still hugely influenced by it.

Prog means progressive. I suppose they could be similar but prog usually means they stay within the boundaries of rock while post means they have gone beyond the boundaries somehow. Prog is ever more complex such as more elaborate arrangements and lyrics, post completely ditches lyrics for the most part, even though it was an essential part of rock, and the music sounds less and less rock like.

There's some good music, but ultimately not a lot of substance / variety in punk. Post-punk took giant strides in musicianship away from normal punk.
