1.) Plagiarism is taking an idea directly from someone else, executing it yourself so that it seems like your idea, and giving yourself credit for it (or not giving the original person credit for it.)
2.) Sampling is usually defined by taking bits and pieces directly from the original work, not replicating, and incorporating it into your own work so that it serves an almost entirely different purpose.
So sampling is kind of like adding 'sprinkles' to your already finished song, while plagiarizing is basically just covering a song without telling anyone it's a cover.

Not really. Blues artists from the 1930s borrowed things from other songs, but it wasn't plagiarism in the way that most people mean it. For the most part, those blue guys were all pretty open about their influences, and if something was being copied, it would have been understood by everyone as an homage. The artists themselves also weren't really in charge of who was getting credit for a song. No one was intentionally ripping off other people's work and taking credit for it. Led Zeppelin did. They took melodies and lyrics from recordings they enjoyed, and deliberately didn't credit the original artists.

The Lion Sleeps Tonight has a pretty interesting story behind it.
The melody came from a song called Mbube by a South African artist (Solomon Linda) who recorded it in the 1930s. In the early 1950s, Pete Seeger heard the song and recorded a cover that didn't credit Linda because he thought it was traditional. When he found out it wasn't, he sent a bunch of money to the Linda and told his record company to credit him. They didn't, and eventually, Seeger's version became a folk standard that everyone thought was a traditional song. Eventually, some record producers arranged a pop version that became "The Lion Sleeps Tonight," and didn't credit anyone for it. Years later, and after a messy lawsuit, it was finally acknowledged as a cover, but Linda's family still barely gets anything for it.
