The difference is that metal is mostly composed. The drumming is extremely complex but it's all muscle memory as far as I can tell.
Improvising takes a much greater level of musicianship.
If there's metal that uses improvisation on the same level as jazz please let me know.

heavy metal drummers can play just as well as jazz drummers. the improvisation aspect isn't the same as other instruments, it's not about melody or key theory but rhythmic structure and phasing.
look at any professional session drummer, they can play absolutely any genre or style. it just so happens that jazz, swing and heavy metal are the most complex due to rapidly changing time signatures and a multitude of other instruments to accent

I realize this, but jazz drummers still improvise a lot as they accompany the main soloists. It takes a lot of skill just beyond muscle memory.
I guess a simple way to illustrate the point I'm trying to make is that I think any competent jazz drummer could play metal very well, but I don't think very many metal drummers could play jazz very well. That just comes from my personal experience with both jazz and metal drummers so maybe people disagree.

i see your argument and agree that jazz percussion improvisation seems a step above anything else, but i can guarantee you the fundamentals are the same. jazz drumming is improvised by it's very nature but it still follows the same rules that any other hard written genre does. bassists are exactly the same
