The music seems so simplistic to me though, I don't think I've ever gotten bored of listening to a song's instrumentals before.

It's never been a genre that's particularly emphasized instrumentation and the composition thereof. Explaining to you, a person that intrinsically doesn't care for rap, why this record is appealing would be like me asking why Dopethrone is appealing. I love metal, and I love dope, but Electric Wizard emphasizes a particular aspect of metal music to cultivate a sound that I don't particularly care for. I don't find droning guitars and barely legible vocals appealing, especially for over an hour, but others do. And that's okay.

It doesn't have to be, I felt similarly when I heard this album, too simple in the beat department. Try listening to stuff produced by the likes of Kanye, Madlib, J Dilla to start with, they typically have more interesting and complex instrumentals.

I listen to hip hop, probably shit that most diehard fans would scoff at, (Odd Future, Denzel Curry, a bit of Kanye, Meme grips, Clipping., Kendrick Lamar, lot of mainstream 90's rap groups, etc)

if you don't like beats try the album before after this one. They might have the catchiness you want.
