What are some other amazing prog-metal bands/albums?
Porcupine Tree
Listen to the title track first if you wanna be blown away by a 24 minute partially orchestral metal retelling of The Oddysey first and listen to the more "songy" songs later.

Allen's voice is so godly, blows LaBrie out of the water.
If you want some stuff similar to Dream Theater, Ayreon's one of your best bets-

Would also recommend Fate's Warning-

Listen to Haken - The Mountain. Falling back to earth is a god tier song.

Seconding Ayreon. Arjen is a madman.

That band is NOT amazing. If you find them so, then anything labeled as "prog" will blow you away.

This.
Images and Words, Awake, and Scenes from a Memory are all acceptably good (albeit still somewhat cheesy, overblown) albums from Dream Theater. Everything else is pretty terrible, but I still love it because I'm an asshole.
Not as particularly related to Dream Theater, but great prog nonetheless-
Persefone
Ne Obliviscaris
Insomnium
In Mourning
Bel'akor
