What would loudness war'd 320kbps MP3 files sound like using high end headphones to someone who isn't an audiophile? I'm curious since almost everyone uses earbuds that come with phones.

Depends on the phones.
I've been mixing for 14 years so there was a point where I hadn't used normal phones or earbuds in years and then tried some and couldn't understand how anyone can even enjoy music through them it sounded so awful but some buds are probably okay.
I would say that going from buds and consumer phones to say, DJ headphones, that don't have a flat response but are still very high end in terms of sound quality, would be amazing to a regular listener.
It's like upgrading to awesome speakers. DJpro2000s sound incredible. The bass being so deep and clear would blow their minds, everything else being bright and clear, would feel great.
I currently use AKG's, and I think something like studio phones with a flat response would, like you said, actually take getting used to. So on first listen they might think, 'these are really clear, but, I don't feel the same listening to the music.' and might take time to get used to it.
Some songs drive you nuts. Like the vocal panning in sublime's 'what I got' drives me nuts through good headphones, even though it's a good song.

That's basically every modern album except for RAM a few years ago.
You won't be able to truly get high fidelity audio using anything with a 3.5mm jack anyway.

They sound fine through AKG 240 II and Amp pic related.
But I use a declipper and delossifier to get rid of artifacting. Like >>71156499 said being this flat takes some getting used to if you're new to it and using the proper tools is a necessity.
