Both sides of this argument are right, you're just talking about two entirely different things. There's Minimalism, the specific movement in contemporary classical music, and then there's minimalism, the normal everyday english word. The issue is that one side is implicitly capitalizing the word and trying to discuss things in that context while the other side is just trying to use words that they know exist. This is why it's important to clarify what it is you're actually trying to say.

For the record I've never listened to a Kanye album but if something has a drum track, three synths and vocals it probably isn't minimalist in the normal word sense either. Unless those synth lines are super sparse, I guess.

It was Tony Banks who hated Peter Gabriel's artistic vision and wanted control of the band (not unreasonable, in general prog keyboardists at least had equal creative control with the lead guitarist).
