Quarters: try Borodin 2, smetana 1, Dvorak 10-14, Hayden's opus 76 quartets, Mendelssohn 6, Tchaikovsky 1, Debussy and ravel quartets (God tier) Schubert 13-15 if you haven't already....Bartok and Shostakovich as well

Outside of string quartets you should try some quintets. Brahm's string quintets are outstanding. His piano quintet and clarinet quintet are both towering masterpieces

Yes, overall I am pretty impressed with him as a conductor. All his recordings have been well directed, though you get the occasional weirdness like the full-retard diction in his Dido recording.

The difficulty comes from that music theory is based around pieces. The rules of learning counterpoint in any conservatory is derived from the school of Fux, which again is derived on what Bach did. The practise of using these tools onto your own pieces and using them relatively is the difficulty.
Its not that hard to make clones or "sound-alikes" of, i.e say baroque music if you know that the rules they used at the time, and stay in diatonic chords.

When mastering these fields, you're breaking the rules you've learnt and make your own. And if you become an acclaimed composer, then people will write books on how you wrote.

I've played guitar (tho not classical) and currently play piano. While the piano is a much more capable instrument, there is a lot more going on and you have to keep track of a lot more things. It isn't too difficult to learn the first movement of the moonlight sonata and impress ppl who aren't classically trained, but to get any where near good, expect at least a couple years playing 2+ hrs a day while taking lessons. Playing any classical instrument is going to be difficult, so asking which one is the easiest is already the wrong attitude. That's why I suggested guitar. Get your feet wet playing easy popular songs and then if you're still motivated you can move up to classical.
