Start with Miles Davis - Kind of Blue. Especially the opening track. That will make it click.
Then go onto Charles Mingus - Let My Children Hear Music. That will show you the heights it can reach.
Then check out Art Blakey - Moanin' to see how impassioned bebop can be. Then continue onto other people from his circle, like Lee Morgan - The Sidewinder and Wayne Shorter - Juju to get more of that sound.
To round out the Essentials, check out Ornette Coleman - The Shape of Jazz to Come, John Coltrane - A Love Supreme, The Dave Brubeck Band - Time Out, Miles Davis - Sketches of Spain, and anything by Django Reinhardt.

In my opinion Chet Baker doesn't get mentioned enough whenever this question comes up, the way he works vocals into his songs make a lot of his stuff very accessible for beginners highly recommend grey December as a starting point with him

Find a jazz venue near you and go. Usually tickets/cover are pretty cheap and you'll see really talented people. It's way easier to get the excitement and marvel at the musicianship of jazz when it's live.
