Their releases are pretty different so it's hard to say, my favorite is Locust Abortion Technician. How you want to go about it depends on your tastes, if I were you I'd do Independent Worm Saloon, Hairway to Steven and then start at the beginning and go chronologically from there. That way you get all their best stuff in order of accessibility for the most part
