Doubling the third adds unnecessary overtones that muddy the sound. Plus it can lead to problems should you care about voice leading.

When doubling, the order of importance goes root, 5th, 3rd. It's because the first few overtones on G go G G D G B D. For D, it's D D A D F# A, and for B, it's B B F# B D# F#. Doubling D in a G chord sounds nice because all of the notecards for the first few notes in the series are also in the G scale, but for B there's a lot of F#s that grind against G and a non-diatonic D#. You can double any note you like but if you want a pure sound it's best to follow the overtone series.
