Do egg cartons really stand up to soundproofing foam?
I don't mind spending the money, but for places that are invisible are they really as good?

Neither. Both of those are for recording purposes to reduce echo etc.
The only way to truly soundproof is to literally build another wall in front of the existing wall. Empty space blocks sound much better than material no matter what it is. However soundproofing material is essential in the process but is usually a vinyl type material usually less than a half inch thick and sometimes can actually be painted on.

If you're trying to reduce sound coming from your room, look into hanging heavy blankets and mattress foam toppers
