They're good (well, Parachutes and A Rush of Blood to the Head are good), but I have no idea how did that happen.

They're bland and inoffensive so easier to push onto mainstream audiences.

same way a lot of "big" artists do. they latched onto a new kind of sound that was becoming popular, and then added pop elements to make it accessible by all.
