It honestly sounds like you're into metal for the wrong reasons. You care more for "muh atmosphere" or some kind of progressive elements rather than an intense delivery of riffs. But those bands deliver the riffs in a relatively slow, easy to digest way. Death metal's pummeling you with far more riffs at a much faster and more intense in general rate, making it overall harder to process and take in than those bands. It's like the difference between traditional jazz and bebop.

Well yeah, that's kind of the aesthetic. You typically don't listen to metal for complexity, you listen for riffs and atmosphere. If you're going into a black metal, death metal, sludge metal, doom metal, or whatever metal album and expecting something massively progressive and complex, you're going to be disappointed. And once you have a lot of experience with metal, you'll start realizing that the massively technically complex stuff is normally the most bland.
