At times. Some genres take advantage of the White Noise it makes, and some just sound good on vinyl. But a lot of genres are better digital, but sometimes the boundary can be blurry.

Why not just add the white noise to the digital file?

i do that to with audacity to things that i want to sound like they're being played in one sitting, like folk albums. generate pink noise 0.5 then lower to -10 or - 20 db over the entire album gives it that nice room ambience
Absolutely not. Vinyl suffers from unintended physical artifacts which can hinder the listener's experience, whereas digital will always be closer to the pure recording.
