Audio quality. Even the most expensive phones go with mediocre to awful hardware when it comes to audio playback since most plebeians don't really care much.
A solid MP3 player is a much smaller device to carry on you and can be controlled while it's in your pocket as well, it's simply just a lot more convenient than using a smartphone.
