I can only speak for rap myself.
Good kid maad city and My Beautiful Dark Twisted Fantasy are what got me into rap properly so I'll mention those.
Enter the Wu Tang (36 Chambers) is certainly a good one as that other guy said, Liquid Swords is dam good too.
I'd also suggest Doggystyle, and The Slim Shady LP, The Marshal Mathers LP, and The Eminem Show for just being good albums, they're fairly accessible I'd say also
