I feel like shoegaze is usually overly romantic in tone in that lots of it consists of pushing rather commonplace feelings like melancholy, happiness, or young love into these large, overblown expressions
It's almost exaggeratedly dramatic in a way but that's also kinda the appeal for a lot of people
A few requests:
Is there some shoegaze that incorporates downtempo or (even better) house/techno beats? I know there are a couple of trip-hop fusion ones but I'm looking for something more atmospheric.
Also looking for some shoegaze or dream pop that's very dense and hazy but not really noisy (think Tim Hecker, Jefre Cantu Ledesma, that ballpark) but also still has drums, bass, and some semblance of structure to the songs. The only thing I've found so far is Belong's Common Era, which I love.

Alright, Ulrich Schnauss's "Goodbye" was one of the best things I've heard in a while. The synth driven nature of it reminded me of early God Is An Astronaut (I know US came first but that was what came to mind), but more atmospheric. The beats and drum work was a very nice touch, gave it an unorthodox feel without being overtly "electronic" sounding. The lush sound of everything and the beautiful chord progressions were the best part.

Vocaloid varies a lot by who uses it, just like any instrument. While I generally think Miku is one of the worst and is rarely used well with stuff like mikgazer the producers understand how to use her voice. The artificial nature makes it a lot more dreamy for me and really fits shoegaze. There's some stuff out there with other vocaloids that are really great. I wish people outside of the general vocaloid community would uses it more. In fact, Susumu Hirasawa used it before Miku was even a thing and kick started the craze (back when it was basically a commercial failure.)
I'll post some vocaloid shoegaze stuff in a little bit since I love sharing it. I even have an album of western shoegaze covers with miku for vocals done by a Japanese shoegaze band.
Is there any country/southern rock inspired shoegaze out there? Or would that be more like sludge metal?

Now here's the weird one, the shoegaze outfit CRYV did an entire cover album with Miku. It's all mu-core tier shoegaze. MBV, Ride, Slowdive are all on here and other really good jems. My key is a Boss PowerStack pedal. Pretty bad for an overdrive pedal but it has this weird muffled sound that absolutely roars when you play it loud. I abuse delay and reverb too of course. DigiTech whammy (lucky enough to have the old 1st version) on the cleans for a weird chorusey sound.

Like your typical guitar-driven rock music except with loads of reverb, extra fuzzy distortion and often many other effects slathered on to create riffs that are swirling walls of sound more than just typical chords. Vocals are often lower in the mix and can even be almost entirely obscured, the focus is on atmosphere more than clarity. Overlaps heavily with both dream pop and noise rock.
