It's a meme in the sense that it's popular because it's such a great value but it's not a bad table at all. Personally I have an 80's Sansui that I really like, I found it in a local resale store. I wouldn't rule out going used if you can test it to make sure it works.
Worth shelling out $500 for a pro-ject debut carbon? Is the audio difference between the Audio Technica big enough for the $200 difference? I've also heard the anti skate sucks, so I'm hesitant to pay that much.

Get some Technics for your turntable. If you plan on DJing get a SL-1200MK5. If you plan on home use though, get a Mk2, you probably won't notice much a difference and if you ever decide to go full audiophile you'd end up replacing most of the more dated components with really expensive shit that the newer models don't even have.
Most is up to personal preference really, browse the audiokarma forums for a few weeks to get a good idea. Don't try and recreate their setups or anything though, most of them are autistic and think that a setup that costs less than their house is literally unlistenable.
As for buying old shit, search Craigslist or garage sales. Older people assume their old machinery is worthless because old machinery generally is, so you can walk away with something that was extremely expensive for the same price as something that is bottom of the line today. Make sure to look up manufacturer and the name of the product though, audiokarma will probably have a thread where they talk about it (though their advice will almost always be not to buy it because they assume everyone wants to be a total audiophile, so try and think for yourself).
