John Zorn's stuff is essential, of course. Especially his live albums with Masada.
The Budapest Klezmer Band's final album "Le Chajem Rebbe" is pathetically underrated.
For something with a bit more of a rock/experimental tint you could go for Shofar's "Gold of Małkinia"
Raasche and Alan Mills' Sing Jewish Folk Songs is a classic, of course.

Well, klezmer's just the tip of the iceberg. That's, like, party music. There's also Jewish chanson and Sephardic regional music. Not to mention religious stuff like cantillation.

It was an album I underestimated pretty hard; DI was at the time my favorite band but I was really suspicious of what I had heard. But it's an incredibly solid noise pop record with elements of their earlier, more avant-garde work in the background.
