1 hour is not that much. Whenever I listen to classical music I usually do it for atleast 20 minutes. It's not like you have to listen them completely at once.
You get everything nicely sorted by the composer. I have like 7 different ones of those on my phone which is ~12 hours of music

As an example, a Beethoven Best of would certainly have Für Elise and the Moonshine sonata, both which are immensely popular, but by far inferior to alot of his other works (Beethoven even said so himself). On the other hand, stuff like the Hammeklavier Sonata or the Große Fuge won't make their way into such collections.

Or for Bach, Best Ofs usually have that one violin Partita, that cello suite, the Aire, the Toccata etc, but the real signature compositions like his Goldberg variations or the Passacaglia and Fugue, or the beautiful Canatas.

Of course, those Best Ofs are good as a starter, but I'd take a deeper plunge into the oevre of a composer to find his really interesting works.

I agree that you obviously miss out on a lot of good stuff but I disagree that you miss out on better works. For example Bachs Prelude No. 1 is one of my favourite pieces despite the fact that it is extremely simple. You have stuff like the Große Fuge which I find really interesting to listen too and whch is obviously really complex but if you are simply looking for joy through music it definetly isn't superior to other stuff from Beethoven.
I see though that one should look beyond basic compilations. But if a composer really catches your attention you will probably do that anyways.

Other stuff just doesn't interest me. It's not that I dislike it, just that I'm mostly ambivalent towards it.

I listened to metal in my teenage years, then the summer after my first year at uni I realised that everything I could conceivably want in a piece of music can be found in the realm of classical music, whether it be intellectual or emotional stimulation (and often the two are combined, which I can't say I've ever really encountered in other genres).

As I say, it's not done out a position of snobbery: I've listened to a lot of /mu/core in the past and can vaguely sustain a conversation about it, but it just doesn't grab my attention in the same way.

He was able to twiddle his fingers in new and interesting ways which is pretty noteworthy. Wrote some nice themes which leant themselves very well to usage by other composers, but I can't say I know his music well enough to comment beyond that.

But dismissing virtuosity offhand as a bad thing is something I try to avoid. Yes, virtuosity can sometimes be used to cover shortcomings in music, but that isn't to say that is its only purpose.

I like the structure. Every 3rd variation is a canon, with a constantly growing interval gap, and that quodlibet at the end - so nice.

Of course WTC is great, but Goldberg is more colorful and has more layers on top of the music itself. (and as a keyboard player, I'm slightly biased towards pieces that have à 2 clav parts)

Passacaglia and Fugue

Yes, the wedge might be more interesting as a composition. But again, p&f has some other qualities that makes it a significant work, since it's more or less the prototype passacaglia of the baroque era that inspired later composers, see passacagliae and fugae by Reger, Kosenko or Godowsky.

Looking for something I heard on bandcamp about a year or two ago.

It was really nice strings, violin and clarinet, the album cover was some sort vector dressing with shades between grey and red.
It had a really haunting style, and the bands name was something sort of Gaelic or Celtic. Like Aether or some shit. I can't remember.
