Dig right into the Warp Records lineup (Aphex Twin, Plaid, Autechre). Guys like Amon Tobin, Boards of Canada, and Kiln get clumped into the IDM spectrum even though they sort of skirt the definition, but their works are still excellent and definitely worth a listen. For less surface-layer material I'd suggest Access to Arasaka, Ametsub, Bola, and Jega as some underrated IDM artists. And if you're intending to listen to full discographies, do so in chronological order, it's more rewarding.

It's a genre that started with ae aphex twin and u-ziq among others. It's pretty loosely defined now but at the beginning it had a signature sound. No point in defining it further, just get a good chronological progression of idm albums if you really want to know
