no label is entirely consistent, but in my opinion some of the best stereo recordings period come from Mercury. they used GOAT telefunken/neumann mics, and the sound-stage is incredibly pleasing to the ear.

in regards to modern labels MDG, ZigZag, BIS, Hänssler, and Alpha are generally pretty good. i would say that a lot of modern record labels have normalized their standards to generally produce recording which are, at the very least, "good enough".

Harmonia Mundi is pretty wild card, though. ditto for Arte Nova.

Hmm. You might be interested in electronic music, I guess. A lot of it, especially the early stuff, sounds fairly low fidelity. Xenakis, Berio, and Boulez have compositions like that. I don't think there are labels which exclusively deal with those kinds of music, but ECM seems to have a bias in regards to experimental and contemporary stuff.
