eh not really, but like i think what would help me the most is if i could do something like highlight a scale/set of notes on the keys (and have it make it span all octaves) also change time signature on a dime.

I like ConcreteFX's Amoeba and Martinic's Combo Model F. Both are free and fairly straightforward.
Your best bet is to study how musicians use real organs and translate what you learn to your playing.
