He'd pilot a Hobby Hizak and you know it. Takumi's ride is mundane. His AE86 was the family car. The F91 and Gundams in general are fancy concept cars. So a civilian mobile suit would be reflective of that.

He'd take out Gundams left and right with the Hizack, though.

He didn't create holograms. Newtypes have always been able to see and feel some kind of retarded "spirit energy". Amuro was able to see Dozle's just before he died, and Haman herself had a kind of energy that resembled a spider lady or something (multiple eyes?)

Judau's power is being able to cause and shift physical forces. He created an earthquake after he saw Haman shoot Leina, and at the final duel of the series he used it to move the inactive ZZ Gundam parts around to reassemble the machine.

I think you guys are being a bit too hard on the 86.

Yes, it's outdated compared to the stuff it races, but it's not some generic family car. It was a performance model when new (comparable to a Focus ST, Civic Si, or something like that today) and it had a successful motorsports career, and Takumi's is quite heavily upgraded.

I'd say it's something like a high-mobility Zaku Variant, but it's up against Zeta-era suits.
