Rockhoof's tale is kind of in a rough place in that it has no *point*. The other two legends are easily relateable to Rarity and Dash-- Mistmane's a unicorn who's defining traits are generosity and bringing out the beauty in others, and Flash is a loyal pegasus who refuses to give up on his friends and is brave enough to put himself in danger for others.

but... what exactly does rockhoof have in common with AJ? Aside from being an earth pony, nothing; AJ has no goals in life and no aspirations to become a warrior or shit like that, and there was nothing about Rockhoof being honest, just getting massive hulk powers by digging.

When they feel that it's their duty to perform a task, they're determined to complete it no matter what, and will keep focusing their efforts towards it no matter how hopeless it seems. It's easy to see how the legend of Rockhoof could inspire this aspect of Applejack's personality. The difference is that, for Rockhoof, this works out because he gets a random magical powerup at just the right moment; for Applejack, however, it's a character flaw which she's needed to overcome.
