Celestia (and, maybe, Luna) sacrifice themselves to save Equestria from the hardest menace ever dealt, after a two-parter where mostly everyone got defeated and at least some secondary character gets killed.
After the battle, Twilight take the lead as the heir of Canterlot throne.
We skip to ~20 years later, where a young adult Flurry Heart (the age Twilight used to have on S1E1) is listening Twilight reading the book she was reading on S1E1 with the Celestia voice off. Around them, the Mane 8 (including Starlight and Sunset), now Alicorn Knights at the service of Twilight, comment on this and their whole adventure times.
The camera takes a panoramic picture of Canterlot gardens, where it now lies a big Celestia (and, maybe, Luna) statue(s) in remembrance of the sacrifice they did.
The scene fades to black, and it shows the credit cards not before a big "Thanks Lauren, for showing us that friendship is magic".

And then, it comes the commercial of My Little Pony: Guardians of Harmony spin-off.

I've got no ideas that wouldn't be incredibly obvious and generic. But maybe a generic ending would still be okay. I'd be fine with a story about the mane 6 reuniting after a few years of other responsibilities making them see each other less, with them reclaiming the elements of harmony to take down one last villain together.

Glimmer finds out the EoH are not as they seem, that there is something terribly wrong. Sunset Shimmer finds EqG's version of Starswirl the Bearded, who confesses her his sins. Twilight begins to believe Glimmer that the EoH were never honest with the mane 6. Celestia has been following Starswirl's prophecy to resurrect the ToH.

Starswirl confesses to Sunset his plan was to rid the world from Alicorn magic, as their magic is elementally evil, and to destroy all Alicorns with it. Crystal Kingdom and Twilight's Castle are both connected to the ToH. The EqG world itself is within the ToH, simulating the world outside. If Sunset doesn't leave the tree before its too late, she'll lose her physically body and becomes the tree's next guardian.

Sunset tries to cope with her new reality and sends Twilight a message of what she learned. With Starwirl's confession and Glimmer's studies on the EoH, Twilight confronts Celestia. Celestia doesn't believe Starwirl would ever mean harm to her and decides that for this matter she'll have to disagree with Twilight.

Celestia wanted all ponies to become alicorns, so she wouldn't have to continue to watch everypony die of old age. The resurrection backfires, as Starwirl poisoned the prophecy, and all Alicorn magic starts running rampage. Daybreaker and Midnight battle, while Luna and Cadence, with Flurryheart, imprison themselves before they lose control. Cadence and Flurry are frozen in crystal, but Nightmare Moon breaks free and joins the fight. Main 5 realise they're all frauds, none of them ment to hold the EoH. Glimmer gets the ponies back up from their slump and calls them to help her to push back the backfiring ToH. Sunset seeing what the ponies are doing outside, decides to sacrifice herself for the friends she knew, even if they never really knew her.

Sunset becomes the Guardian of Harmony, all princesses lose their wings, except Cadence who loses her horn and all Alicorn magic is sealed with the rest evil under ToH.

Time skip. Everyone's kids are led by Princess Flurryheart to a church, build around the Tree of Harmony, where we see the graves of Luna and Celestia. Flurryheart tells the kids how there used to be ponies so powerful they could bring forth day and night. They were called Alicorns, but even she doesn't remember much about them, because she was still a baby when they ruled Equestria. As they leave, one of the kids with Twilight's mane style notices Sunset's ghost hanging around the ToH.

M. Night Shamalamadingdong ending where it turns out everyone evolved from humans or something.

A three part adventure involving the mane 6, the CMC, spike and Glimmer fleeing from/surviving a sphinx invasion overrunning ponyville and then trying to find a way to defeat the sphinx's by venturing to the land of sphinx's. Rather than out right defeating them, they use all they have learned throughout the series to negotiate with/befriend the sphinx and create a peace treaty. Ponyville is completely destroyed minus twilight's castle and is rebuilt to look more like twilight's castle.

I'd honestly love to see a three or four part epic.
I dunno who the villain would be, but they'd be the most dangerous one ever.

I'm sure of how the story would actually go itself, but the Mane 6 are initially defeated. Villain marches right into Canterlot with their army and pretty much defeats them, like usual.
Celestia and Luna realise how dire the situation is as this villain would NOT be good for Pony life and decide to do something they've never done before.
Unleash their entire magic reserves. At once.
It does the trick, the villain is gone, but the two princess' end up sacrificing themselves in the process. Celestia sends a final letter through Spike explaining what happened, and the Mane 6 go outside just in time to witness almost the entire mountain surrounding Canterlot vanish in a colourful magic eruption. There's nothing left but the ashlands.

The final five minutes of the series show about 20 years later in the city of New Canterlot, where Twilight has assumed the Equestrian throne with her student, Princess Flurry Heart. She looks upon the massive statues of Celestia and Luna that are half as big as the castle itself, commending their actions.

Cut to a scene similar from the storybook at the very first episode of FiM, where we learn who the main characters are for the gen 4.5 spinoff that comes out in a year or so.

Fin.

I guess a two parter featuring all the main six and glimmer. Maybe they all face evil versions of themself (think Daybreaker and Nightmare Moon). The last episode before the finale should resolve the cutie mark crusaders somehow.

It's been decades since the last episode, a historian is talking to a thinner and taller Twilight about the Mane 6, giving what amounts to prologue information. The historian is noticeably awkward, so she helps him a little, she's never given up on helping ponies. The rest of the episode we get Twilight reminiscing on the past, giving fandom shout outs subtly, feeling slightly unsatisfied with the present with it's fads and attitude, and being unsure about the future. Celestia reminds her, like she always does, that things will turn out fine, ponies and society change, and she'll always have her memories. Fast forward a few months, the historian's book is doing well, people are interested in Twilight and her message. She receives a letter in the mail, it's from the historian, thanking her for all her help, with a free copy of the book. She sits down, reads some of it, shuts it, and places it on a stand next to her. Pan slightly out seeing some of the pictures on her wall of friends and family, maybe even a very very subtle meme among them as one last shout out to the fandom that made it all possible. Credits, thank the cast, writers, animators, and fandom for the wonderful years we've had. /series

The S5 finale felt like such an absolute end that ever since I've considered all seasons beyond to be a spin-off timeline and not canon.

This is where the show ended. I can't understand all the assholes from Reddit enjoying the death of the show starting with season 2.

I also don't understand why the executives made the season 1 finale be so bittersweet. Why did everyone had to fail their dreams? and why did it end right there? that was a horrible epilogue. Spike's line about sticking together was just brushed off.
