No one in the show was ever seen to die of age, but it is heavily implied that death is a thing and mostly environmental. The everfree forest which used to be a highlight in the show, still host major threats like Timberwolves, manticores, chimeras and anything else that would "eat" a pony. Falling for unicorns and earth ponies is a major hazard. But age is never ever implied as being any indication of causing death.

The show parallels our own myths and legends very closely, dragons were said to of had lived for thousands of years, so is true for unicorns as well. However both were hunted and can die by outside influences like a Knight in Shining honor.

In the show every creature seems to be magical or have some level of magic, perhaps this keeps them all as immortal. It never was officially delved into by either cannon so it still is speculation. I just laugh when many argue that Twilight must be immortal because of Celestia also being an alicorn must mean immortality. What they forget is that Unicorns were always immortal if you want to pull correlations out your bottom and say they are causation.

So far all we know is that everything in equestrian are probably centuries old.

Also, a characters as massive as torch would make a poor rig, since he'd often need to be drawn from unusually perspectives. Every episode he appears in where they aren't doing a boring profile view of him would require a lot of hand-drawn animation, which is expensive. Therefore, a little dragon became ruler because of fiat, and now the queen of dragons shows up as a proper rig that can be cheaply and efficiently animated.
