We really don't know how deeply changelings' shape-shifting ability can affect their bodies.
They feed on love, which could mean anything from absorbing Green Lantern-style raw emotional energy to "magic of love" in same vein as the "magic of friendship".
And since that implies that they could run entirely on magic they could be some sort of constructs or entirely (magical) energy-based lifeforms that reside in artificial bodies they can manipulate to a great extent.
Anticipating a question "What's to stop them from being X?" they themselves could be the limit, same as us humans not willing to "lose our humanity" under any circumstances by inhabiting a non-humanoid form should the means of mind upload present themselves.
Another potential limit could be the flexibility of their psyche, as in how big of a change it can withstand without long-lasting effects, such as loss of identity and the likes.
You see, our bodies help shape the way we think. Why, our very perception of our body greatly affects our sense of self. Imagine your body being different than what you are used to: say you are turned into a pony, wouldn't that change the way you think of yourself, given time of course?
Now imagine being in changelings' place, where you can turn yourself into, pretty much, anything of similar mass. See where I'm going? G̶o̶o̶d̶,̶ '̶c̶a̶u̶s̶e̶ ̶I̶ ̶d̶o̶n̶'̶t If you spend your time being a griffon or a pony, at some point you start to think like one because, well, you /are/ one, or at least pretend to be one. Then you throw in the interactions with others, living among ponies while being disguised as one... I'd be hard-pressed to go like that for more than a few weeks as I would start to "lose myself" at a certain point.
