So why do people say that the Scootaloo reencodes are actually better? Isn't any change to the colours a deviation from the original intent of the animators, which is what I assume the iTunes versions have?
Also my biggest issue with them is that as a reencode you necessarily lose information, this is especially visible in busy scenes like the snow during Luna's Future (look at the snow and how much blur is there, also I'm pretty sure I prefer the original colours here. It's in two posts so you can open them in two tabs and quickly switch to compare). Although you can actually see it very well on your pic too, just look at pretty much any outline on the ponies, it's pretty bad.

I just didn't bother raising my initial expectations, regardless of what an episode here and there may have made me think.
Besides, the last two episodes of S7 so far were pretty damn top tier.

It's simple, I got into it because it was fun or somewhat exciting and it had a certain charm plus the songs were great. Now I watch a S7 episode about Twilight babysitting Flurry or Big Mac trying to date Sugar Belle, and it's not exciting, it's trying to be but mostly is not funny, the songs are bland, the charm long gone and I either lose concentration because there's nothing to concentrate on and start doing something else while playing it in the background, or I go and watch an older episode instead.
Besides, Discordant Harmony was a stretched 10 minute long episode because they ran out of ideas and The Perfect Pear had a lovestory as generic as they come, explained nothing and went all in on the "muh dead parents" feelride. The song was pretty uninspired. "You're In My Head Like a Catchy Song", too bad this wasn't one of them. That isn't bad, but far from top tier.

It gave pretty much the entire backstory except for the part where they died, how is that "explains nothing"? Also people wanted an AJ parents episode for a long time, I guess you weren't one of them.
Also in my opinion season 1 has quite a few bland and not very exciting episodes too considering how safe they played it, but if you prefer that then so be it.

Explained as much as "he was an apple, she was a pear", the rest was left blank. We know how they fell in love (at first sight, obviously, we wouldn't want to waste time), but not what happened the years after. Not only how they died, but also how the kids were raised. And nothing about the years before, either. Good thing everybody in Ponyville seems to know more about the Apple parents than their own kids, so the episode can move from one NPC to another to collect all the flashbacks.
They just told the saccharine Romeo & Juliet romance story, but nothing about them. And the whole thing about AJ and especially Big Mac only just now caring enough to find out who their parents were takes me out of it before the episode even properly begins.

It's funny, I never got spectator sports at all until I found the cup. But man, the high of winning summer was so intense, getting caught up in the crowd, all of it. And then it happened again!

It just served no purpose. There wasn't really anything to learn, there wasn't really anything objectively wrong other than Twilight not being able to say no to babysitting apparently...

I wouldn't say it's anywhere near as bad as, say, Spike at your Service, but if there's nothing notable to say about it, positive or negative, you can't really say it was a good episode.

Flurry ep had maybe a couple jokes or a cute moment or two, but overall it was boring as shit and also dumb. The whole premise is Twilight having to visit three places in three hours before getting to the hospital, but somehow the kid doing wacky kid stuff!! delays her so much she might not make it. And most of the episode is just that - get to place one, Flurry does something retarded, get to place two, Flurry does something even more retarded, you get it by now.
It ends up in the great scene in the hospital (the fact that she's bringing her between all the sick kids aside), where Flurry throws a regular temper tantrum because her plushie is gone. That's fine, she is like a year old and obviously doesn't understand what is acceptable behavior, how to really communicate, she's just a dumb kid, you know.
That's when the episode gets resolved by Twilight seriously explaining to Flurry what happened, Flurry completely understanding and forgiving Twilight. It's completely bullshit.

There were some fun moments, like in the art gallery, but most of the episode was pointless and boring, borderline annoying at times, and the ending was a big fucking joke. So yeah, as that one anon said, "whatever" at best sounds about right.

Slice of life episodes are the best episodes, but there's gotta be something about them to be good. Character development, entertainment value, crap like that. They don't necessarily have to build off each other, although continuity is generally ideal when it matters.
But still, there was just nothing really entertaining about the Flurry ep. There wasn't even really any character development. An episode can be good without one of those two important factors, but of the episodes that have had neither of them, how many do people say are good? Hell, some even go the opposite direction of them, like Spike at your Service.

I've got that Iron Will episode in my top 3, purely because I think Iron Will is fucking hilarious. As an episode on its own, it doesn't really go anywhere character development-wise, Fluttershy still barely stands up for herself when she needs to... But god help me, the entertainment value of that ep was high to me.

It's all still boiling down to opinions anyway. Despite the general consensus of 4chan telling you your opinion is shit, and everything related to it is shit, and the main topic of the board as a whole is shit, you're free to enjoy what you want. If you see something entertaining in the ep that I clearly don't, then great.

streamlink should work in the next release again, you can also try the development release. livestreamer still works with the hitbox URL. However both currently start lagging behind and skipping stuff immediately on some streams, so they don't really work reliably. The only actual option I currently know of seems to be piping certain non-rtmp streams from youtube-dl to your player (or using them directly from mpv, or getting their URL and then playing them with your player).
