Equestrian economy is mostly based on agriculture and trading their food to other countries. They don't have big factories and manufactures, even though they have needed tech and magic to build it. It simply is against their values and society, they are so focused on their cutie marks and special talents that things like assembly lines simply are against it.

Just wait untill industrialization hits other countires, and they would flood Equestria witch cheap, mass produced shit, and stop buing Equestrian food because they would be able to produce their own in big quantities. Equestrian economy would break, mark my worlds.

It's not an economic system so much as it is a consensus of cutie marks. Ponies are peaceful harmonious reality warpers whose greatest talent is manipulating the world for the perfect expression of some petty mortal talent.
