The first 2 seasons focus on friendship lessons. Taking influence from the show's original writer before she left at the end of Season 1. Season 3 was like playing catchup and trying to find out the shows new nature, and seasons 4-6 are the adventure episode. Some of it is slice of life, some are wacky adventures, and some are emotional.

Basically:
Seasons 1-2 = Friendship show
Season 3 = Different premise show
Seasons 4-6 Generic cartoon plots with ponies from Season 1-2


I haven't seen S7 yet, but I here it's pretty good.
