Sunset's arc is done, it'd be like trying to start a show centered around S4 Twilight. The series would be better off with Scitwi in the spotlight trying to learn about friendship and magic instead.

Not to mention that she is THE leading expert on Equestrian magic, so we would get to see her use her knowledge from when she was Celestia's student
We'd probably see flashbacks of how she became her student and what caused her to go down the path that lead to the events of EqG1
If anything, I could see Sunset and Scilight being the main characters because of the reasoning I gave for Sunset above and what you said for Scilight learning about friendship
EqG looks like they're going to be going with a super hero and magical shenanigans route

So, that's 3 plots they can explore simultaneously, 4 if they toss in the governments reaction to magic
