I saw a blogpost on this last week. Made by some egghead before S4 started airing.
He suggests that Luna & Celestia weren't born alicorns. They were unicorns with an especial knack for the Sun & Moon magic. At some point after getting their QT Marks they took over the responsibility entirely and ascended. Keep in mind this was 2 years before the Flurry episode implied it with that Luna line.
Furthermore, he cross-referenced still from the Hearth's Warming episode against still from other episodes and sections of the official map and came to the conclusion that The "Palace of the Two Sisters" is actually the spot where the 3 tribal leaders came together and settled their differences. It was built to as a communal embassy to commemorate Friendship Ground Zero. When the Sisters came into power they made it their base of operation due to its symbolic importance. When NMM happened a heartbroken Celestia retreated back to the mountain the Unicorn Kingdom was built on, and it eventually became Canterlot.

This was before the Journal of the Two Sisters to. All things considered I kind of like this guy's version of events better.

Had to go watch Crystaling and MMC. In Crystalling, when Flurry is shown, both Celestia and Luna state that they have no knowledge of Alicorn being birthed or record of such.

But on MMC Celestia says Twilight's ascension is the first. I figured the sisters have no memory on why they exist. And then theres Cadance, who just appears in S2 ending. And on Crystal Empire Part 2, when she flies with Spike to deliver the Crystal Hearth, one crystal pony calls her the Crystal Princess.

What about griphons, minotaurs, zebras or any other race in their world?
I mean you can assume that griphons hunt for their food, but they wouldn't be able to build civilization if they were only hunters, so they need to farm food. And even if they buy a lot of their food from Equestria, it was logistically impossible to supply whole nation from external sources, before invention of trains.

And what about plants outside of places where ponies live? I'm not speaking about Everfree but about whole rest of the world. Is rest of their planet wasteland, because they don't have earth ponies there? No, it isn't. So obvious conclusion is that their plants work just normally, earth ponies can just accelerate their growth.

And other kinds of ponies are perfectly capable of sustaining themselves. Even if unicorns can't do it with just magic, control over weather really makes gigantic difference.
Pegasi alone could make a lot more food than other races (not counting griphons), yes not as much as earth ponies, but still more than any other non magical race.

This. Most unicorns are hardly depicted as being capable of anything more than levitation, and possibly magic relating to their talent. There is no evidence that a unicorn can grow food. A lot of the spells brought up are things we see the likes of Twilight, one of the most talented unicorns in Equestria, do, and are likely beyond most unicorns. Even then, her unicorn self struggled and failed to do ageing magic, which a previous anon mentioned as part of the key to growing food. Most unicorns know enough to get on with life, and that's pretty much it. Twilight herself also talks about the whole "talent in magic" thing that she has, and she does it in a way that suggests that unicorns with a talent for magic itself are uncommon. She says "what if a unicorn's special talent IS magic?". She's hypothesizing, which means it isn't common enough that the answer to the question she asked would be a given for an academic of her caliber (she literally had access to the best known resources their society has to offer, I might add). In the show, we've met maybe three unicorns with that talent: Twilight, Starlight Glimmer, and Sunset Shimmer (canon status notwithstanding, it was her talent). So that's potentially three unicorns with the generic talent for magic, out of the many we've seen roaming Equestria. I'd say that's a pretty uncommon talent. No unicorns have been shown as having a talent to actually grow food, though many are culinary experts, meaning they can prepare food just fine. Preparing!=growing
For all we know, earth ponies have the magic of getting food related cutie marks. It's contrived, but it at least gives plausibility to the claim that earth ponies have a use.
Also, it is worth mentioning that as an alicorn, Twilight has earth pony magic. It's plausible, though not proven, that it could influence the other magic within her.

I could go more into how I see Twilight becoming Alicorn. If it went how I think it went, it ties up the first 3 seasons.

TL:DR Twilight used Starwhirl's spell on the EoH to teleport herself to "Celestial Realm", where Celestia has the power to turn unicorns into Alicorns.

Twilight's mother is a reference to G1 Twilight, known for her talent to wish herself to teleport. From the beginning of S1, we can see Twilight quickly grasping the teleportation spell. First time she uses it on the show, she tricks Nightmare Moon to duel her, only to teleport behind her at the last second. S1E3 as Twilight and Spike try to escape from the ticket hungry townsfolk, Twilight casts the teleportation spell on reflex by accident and leaves burn marks as she does it. S1E4 she uses the spell multiple times as she follows Applejack on her chores. Some episodes showcase that she has a quirk to teleport around when she gets agitated. Lesson Zero, About Time.

Now, I would want to believe this all builds up to S3 finale. That way, we've got another plot building up from the first 4 episodes and through the first 3 seasons. The spell she cast goes; "From one to another, another to one. A mark of one's destiny singled out alone fulfilled." - "From all of us together, together we are friends. With the marks of our destinies made one, there is magic without end." The first verse probably isn't part of the spell. This itself could be alicornification, since its "magic without end", but it could also mean Cutiemark magic, as its all got to do with one's destiny. Instead of empowering her with raw magical power, the spell empowered her cutiemark to reach it's peak. And her cutiemark is a star, or a sparkle. Giving her talent in magic, or to teleport, blink.

The EoH empowers Twilight's talent to teleport and send her in, what I can only call "Celestial Realm", place only alicorns should be able to reach.
