They can make episodes based on fetch quests to get medicinal herbs, rare cooking ingredients, some ancient items, etc.
They also can make episodes about crosstowns cooking/acrobatic/magic competitions, or make an episode where Ember visits Ponyville and it's up to Spike to show her the right way to socialize and befriend Ponies while Ember spills her spaghetti because she has zero idea about this friensgip stuff.

A lot of these ideas sound dull and saccharine activities to make the characters do. Twilight is a princess, Dash is a Wonderbolt, and Rarity owns a chain business that's booming in two major cities. The show has shanghaied itself by being short-sighted and terrible. You can't write the struggles of a character who has it all and who achieved all her dreams. Especially not after the big reveal that having it all is easy - nay, effortless.

And what about the Everfree? Or Zecora getting sick? The ponies have infinite resources. Every living creature in Equestria is beneath them. Griffons, Dragons, Diamond Dogs, Changelings - all objectively proven worse than ponies and not a match.

The reason the show is boring is because there is nothing for ponies to achieve and nothing for them to fight. There's nothing left for them to learn, because they're already content knowing the nothing they know. So content they're taking on students and teaching THEM nothing, and cherishing that nothing as a life accomplishment.
