Because they already shown the parents once, no need to get into it. Same with the other character's parents. Same will happen with AJ and Rainbow parents, shown once and forgotten. It's just how it is. It's only siblings that get any spotlight. Family isn't all that important it seems.
In case of Twilight they also live in Canterlot so it's harder to make an episode with them. They are as good as gone now. We won't be getting Twilight's family-centered episode ever.
