They'd certainly taste similar.
I haven't had pony, but have eaten horse and venison(deer) and they taste recognisibly similar. So I would imagine pony would be very like horse.
Then again, with the European meat scandel from a couple years back, maybe I already have.

Faguette here. Eating horses isn't that taboo here (or at least, wasn't until recently with the 2013 horse meat scandal) and I ate both horse meat and foal meat in multiple occasions. The taste is a blend between beef and venison, it tastes nothing special really. Most people here literally can't tell the difference between horse and beef. It's extremely tenderer though, so beef meat is replaced by horse meat in some culinary specialities.
Also squishy, tender pony flesh is canon. (it's true for unicorns at least)
