At first, Gabby kinda gave me a headache. She talked so much in the episode, it was exhausting. But she really grew on me. I love the character, and I hope she can get some more screentime to develop her character a little more.

That's not even fucking close, Mary Sue isn't some measure of DBZ-style powerlevel or whatever you seem to believe, a Mary Sue is someone whose powers of convenience circumvents the plot so that they can be in the spotlight, and typically leads to the lead character falling in love with her and her being adored by everyone.
Gabby is the exact opposite, where her character IS the plot, and the CMC, ponies around Ponyville and literally every griffon back home finds her and her upbeat nature annoying.

If you don't like her, that's fine. But calling her a Mary Sue is objectively and demonstrably false.

The griffon's back home who hate her are a narative equivalent of "her parents died when she was young". For all the time she is in Ponyville, everyone she comes across likes her because she's so good and able to help everyone do everything.

Also the CMC actually end up falling in love with her by the end of the episode. And the way I see it, they're not bothered by her at first because she's anoying, but because she's so perfect they can do nothing to help her. Remember that she aced all the "cutie trials" when the CMC struggled with each of them for seasons.

I dunno, I think Gabby opened up a plotline got griffons, so that's possible.

Babs, on the other hand, was basically thrown away. They brought her back for the Apple Family Reunion only because Apple Bloom needed a friend. Then they resolved her cutie mark thing off screen because A) Watching her get her cutie mark would be excruciating when the CMC didn't have theirs yet and B) They needed to put pressure on the CMC to finally get their marks.

Now they could have done both of those things in an episode revolving around Babs getting her cutie mark, but let's be honest: not many people really want to watch that, and it likely wouldn't be particularly powerful. Maybe the comics can do a one-off about her growing up poor in the inner city and finally finding confidence and value in being a mane stylist. But to get the show to veer that far off track for a very minor side character wouldn't happen.

The very existence of Babs was to have an ep about bullying, and the reason she stuck around is because the message of the ep involved redeeming the bully. Thus, they were stuck with a by-product of a character. I think, to their credit, they disposed of her well.

Even if we don't see her again, I think her purpose as a character was well-served, and I'd be overall satisfied but I'd like to see more anyway because she is cute.
