If I had to guess, I'd say we'll simply get the story of them falling in love with each other with no details on their deaths or if they're still alive.

It made plenty of sense. It just introduced the question of why Apple Bloom wasn't present as a baby. This is a difficult question, because babies are important to every scene and must show up if they're able, so I can see why the Apple parents being alive is more likely than Apple Bloom being with a foalsitter or in preschool or something.
