Yeah so I've only ever watched a couple of non-opening or finale episodes and this basically reminded me why.

You guys have gotten me on the pony ride so it was still cute and watchable, and certainly for its target audience I think it's a great cartoon, but I struggled to really have fun while watching the extremely unsubtle and exaggerated friendship lesson setup and unrealistic characters (specifically Twilight, with her completely ignoring the bickering one moment, then being a wise friendship mentor the next, with a bout of utmost "it's not in the book so I'm incapable of thinking for myself and have no idea what to do" stupidity).

It also sucks because I want to enjoy it, since I love the worldbuilding (...and the porn...) but can't bring myself to like the actual show. How do you guys do it?

Maybe try sticking to seasons 1 to 3, after then, the original writers have all left, and the feel of the show changed notably.

As you can see from my roll post, I watched S1E8.

I know people meme a lot about the earlier seasons being so much better, but while I'm not saying that's not the case, the issues I mentioned turn me off the show enough that I can't pay enough attention to the details to actually tell the difference.
