Because she's not real. She didn't even exist prior to "magical mystery cure" when Twilight essentially hard-reset the entire universe with magic she didn't understand.

The only thing Twilight knew about Pinkie's family was that she had sisters, but not their names or how many of them she had, but she assumed that Pinkie must have been close to them. So the universe re-aligns, and in order to fulfill Twilight's vision of a family member that Pinkie is close to, Maud is created. She exists for no other reason than to have a sister that Pinkie can be close to.

It was unconscious prejudice on Twilight's part. She "knew" the Gryphons had a grand kingdom based on military strength, but deep down she doesn't actually believe a civilization different from pony kind (e.g. based on friendship) can actually work, let alone be prosperous. I know why Maud appeals to people.

It's because she, unlike 98% of women, is chill.

She doesn't go 300% in expressing all of her emotions, like how some women (or trannies on hormone therapy) burst out laughing when they're only slightly amused or cry for hours just because it's cloudy out. Not because she's depressed or traumatized, but because she's just stoic. She cares and loves, but she doesn't let her feelings or fear overpower her.
