Depends on your definition of canon.
Akira Toriyama stated that GT is a side story essentially, and it doesn't follow what he believes would be the sequel to DBZ, but it is however canon to the anime which is canon by Toriyama's own words.

It's fucked at this point, but it doesn't matter.

Super started really meh but it started to get better once the movie rehashes were done and the current arc is honestly probably the best since Cell. It's certainly more focused than the Buu saga.

Where is that universal definition of canon stated? Even so, Toriyama himself wrote multiple mangas that tie in to the original Dragon Ball manga. And he's currently planning the story for Super, that's as canon as it gets aside from him drawing shit that he literally doesn't like to draw anymore.
