There was a flash associated when she and Glim Glam did it which we can't be sure was there when Hoofdini did it. Also, Hoof was an Earth Pony, right? Makes the illusion much more spectacular. Also, I believe it was stated earlier in the series that teleportation is very difficult and most unicorns don't bother with it so it's not a common skill.

I think the illusion may hinge on making it very visually clear that the pony in question was fully in the beast's mouth when it closed and started chewing. Magic seems to be mostly line of sight, so you could convince the crowd of the spectacular feat.

If you look at the sketch art they do for storyboards, like from convention screenings and even episodes like Simple Ways when Rarity is showing her sketches for the festival, you'll see that the artists draw the ponies' faces with sharp, pronounced noses. These close ups are new assets, so they're relying on the style of the current artists, rather than going back and doing what Faust did or trying to imagine how a horse would look at that angle. Frankly, as much as I dislike the pig-like snouts, nothing about the ponies faces is remotely equestrian, so beating them up for not doing horse snouts is probably misguided.
