Been thinking about how to arrange the cast and all for this kind of thing, trying to stick to recurring pony characters as much as possible. And I came up with:

AJ as Toriel, Big Mac as Asgore, and Applebloom as Asriel. Of course, this would change the relationship between the from mother, father, and son to all of them being siblings unless you want both, which is okay i guess.

Spitfire could be Undyne and Rainbow Dash could be Papyrus. It would fit the whole mentor/student kinda relationship they have. And as a compliment you could have Scoots as Monster Kid, admiring both Spitfire and Rainbow Dash in the end.
Got nothing on Sans.

And to complete the collection of kids (minus Chara who I've got no idea about), I guess Sweetie Belle could act as Frisk.

Fluttershy as Napstablook seems fitting, Derpy as Temmie, as well as Twilight as Alphys.

Rarity and Pinkie both have pros and cons for being Mettaton or Muffet.
Rarity as Muffets fits in terms of a bit frilly fashion, tea parties, calling people dear, etc.,
but Rarity doesn't bake. Which Pinkie does.
Pinkie, unlike Rarity, fits as Mettaton in how MTT set up weird sets and plays with Frisk, but Pinkie isn't that glamorous.
My final opinion is that Pinkie should be Muffet and Rarara should be Mettaton.

These are all just my suggestions, trying to mind the dynamics between characters and reflect them in the pony cast.

Kinda wanna go Sweetie Belle as Frisk and Anon as Chara. That way Anon is the narrator, bringing the meta, and Anon is generally portrayed as a bit darker in personality than Ponies.

The tricky part about Sans is his role in Undertale. Being a lazy physics breaker, but having a strong brotherly instict towards Pap and a strong, possibly romantic, feelings towards Toriel.

So, in my set up, a character that believably would be an older sibling of Dash and possibly ship with AJ, and posess that crazy strength.
Lightning Dust is not a bad idea, and Soarin' is also a possibility.

Chara is in the game for 3 reasons.
the first reason is a bait and switch
the second reason is a place for players to place the blame for their actions on,
and the third is for threedeepfiveme game analysis joy.

Lets summerize the first two real quick. The first is pretty straightforward. In undertale you name your character fully expecting it to be you. That character turns out to be chara, and to further contrast, Frisk is made to be very tubla rasa. Little information is ever given on the character you are playing other than this character is not chara. Contrastly the character you do name has a very defined personality and role.

The second is that at the end of the genocide route chara has been looming over you the whole time, hints here and there. The player is expected to foist their actions off to chara, to hate them despite all their actions being completely their own, and being fully capable of reseting and therefore stopping a genocide run, all the way to the throne room. Chara is there to make the genocide player a hypocrit and to punish them for thinking they are above consequences.

As for who Chara actually is? Chara is actually the most detailed undertale character in the game, as they are the narrator, and voice almost every instance of text outside of other monsters.

YOU are the kinds of people who ruin these kinds of things moving them from "This is great" to "EVERYONE MUST LOVE THIS AND IT MUST BE EVERYWHERE." And my argument is that it is those same kind of individuals which put the MLP fandom where it is today. Hated by many because of people who think when someone tells them to calm down, it's a "witch hunt". And I bet you probably reacted in a very similar fashion with ponies.

These things happened with many communities, people end up hating everything about it because of behaviors of certain members of the fandom.

If your goal is to make people have a good time and have fun as you claim, stop acting like this, and more people will be drawn to it.
