Evolution is like an opinion on how a species can survive long term, Herbavores decide that the best way for it's species to survive is eating something that is extremely common and almost guaranteed to never run out.

Carnivores decide that the best way for a species to survive is to work hard for it's meals, which favors natural selection, because the weak won't be able to eat, and therefore not reproduce, thus building a stronger species.

and Omnivores just decided to have a balance and basically be able to have the best of both worlds.
